Last Friday afternoon BCV designers, representatives from AIA, and the project manager from Belcampo all gathered to give a tour of Belcampo Meat Co, the restaurant and butcher shop in Larkspur’s Marin Country Mart (up for an AIA LA Restaurant Design Award!).
Attendees heard the Belcampo story of sustainable and ethical farm to table practices, and the resulting design of the first Belcampo location in the Bay Area. BCV Principal Hans spoke of this modern butcher shop as being rooted in the old butcher shop traditions, while containing aspects that bring it into the current era. The integration of a restaurant created a new typology, however the necessary separation of the two programs was one of the challenges of the project. An explanation of different cuts in the case brought to mind architectural parallels in the art of preparing meat. Attendees were treated to samples of some of Belcampo’s cured meats toward the end, and as it was a beautiful day in Marin, the ferry back to the city was the perfect finish to the tour!
